To make great ramen, you need to go back to the basics each day.
I started working at Rengaya in 2000, when Sydney was all abuzz with the Sydney Olympics. Over the next 8 years, what I learned was how to ensure that customers went home not only thinking, "That was delicious!" but also, "I had so much fun!" and "I'm really glad I came."
Then Menya Noodle Bar City (CBD) opened for business in 2009. At Menya, our soups are our pride and joy. For that reason, I want all of our customers, both men and women, to enjoy every last drop of their soup. We make ramen that you could eat every day and never tire of. But we don't get caught up in the daily routine of it. In fact, every bowl of our ramen is made with passion and care, as if it was the very first we ever made.
As a man who loves his ramen, I serve my customers the kind of ramen that makes me say "Gosh this tastes great!" and I will continue to do so.
Why? So that we can be the best noodle bar in Sydney, of course!
